Buttermilk Congealed Salad

When I posted the Watergate Salad, a friend sent me this recipe from Southern Plate for Buttermilk Congealed Salad. You can use any flavor Jello you wish. I chose orange.

There are only a few ingredients:

  • 1 20-ounce can crushed pineapple

  • 2 cups buttermilk

  • 8 ounces whipped topping, thawed

  • 2 small boxes gelatin of your choice

It's really easy, you just pour the pineapple into a pot and bring to boil.

Then add your Jello and stir. Take off heat and stir in buttermilk.

Let mixture cool completely (about 30 minutes) and fold in whipped topping. Refrigerate 4 hrs to overnight.

With only two of us here, I didn't want to waste a bite, so when it was ready, I filled these toddler containers from Wal-Mart and froze them. That way, I could pull one out of the freezer in the morning to thaw in the fridge, and have myself a snack by afternoon.


Gotta say, I was skeptical about the buttermilk. Yum!
