This is my original recipe. I took inspiration from portions I liked from recipes I've read online and in cook books and made my own version with clean ingredients.
I start by melting about 2T beef tallow (you could also use olive or avocado oil) in an iron skillet. Chop a small onion and about 1/4 green bell pepper and saute them together until onion is translucent.
Add beef and brown, using spatula to chop beef into small pieces.
Transfer to large pot. Add salsa, beans, tomatoes, and spices. Bring to boil, then reduce heat and simmer 20 minutes or so.

Ingredient List
2T beef tallow (or olive or avocado oil)
1 lb grass-fed/grass-finished ground beef
1 small onion
1/4 green bell pepper
16oz jar Simple Truth Organic thick and chunky salsa, mild
3 cans Simple Truth Organic Tri-Bean Blend, rinsed and drained
28 oz can Simple Truth Organic diced tomatoes
1/2 tsp chili powder
1/2 tsp cumin
salt & pepper, to taste

Once cooled, can be packaged in straight-sided jars and frozen in servings for a later date.
Variations
This chili, like it is listed, has a mild flavor with a soup-like consistency. If you like a hotter chili, you could increase the amount of spices used, you could add cayenne, you could use a medium or hot salsa, or you could add hot sauce.
You could use another kind of ground meat like turkey. You could also add other spices of your choice. You could also change to another kind of bean.
Sorry I forgot to picture the end result, but boy is it good!
