Smoothie Bananas from Fresh

We recently bought a big bunch of bananas; so many that I was afraid we'd lose them before we could get them eaten so I decided to put some back for smoothies.


I used a paring knife and cut my bananas and placed them in a single layer on a sheet of aluminum foil about the size of my cutting board with my cutting board underneath. (Note: I did not cut them on my cutting board. I just used the cutting board as a base. I cut them by hand.)

I made three layers that way, one on top of the other, still with my cutting board underneath to give my project a layer of stability.


Then I placed the board with my three layers on top into the freezer until the bananas were frozen. (I left them in there overnight.)


I then pulled the frozen banana pieces off the foil and placed them in a gallon-sized freezer bag.


I like to use parchment for this but I was out of parchment at the time. If you use aluminum foil, just be sure you get all the foil off before you place them in your freezer bag.

I dated my bananas an put them in the freezer with my other frozen smoothie fruit. These will last for a long time in the freezer. I would toss them if I started to see freezer burn on them. I don't think they'll last that long. Wink, wink!
